Kabsa in Arabic kabsah) is a rice dish served mostly in Saudi Arabia and Jordan
- 1/3 cup oil or butter
- 1 ½ kg chicken, with skin
- Coriander powder 1 spoon
- Chilli powder 1 spoon
- Black pepper powder 1 spoon
- Chopped onion 1 cup
- Chopped garlic ½ cup
- Chopped Ginger 1” piece
- Tomatoes 1 cup Chopped
- 2 spoon tomato paste
- 2 spoon baharat spices(***)
- 1 dried black lime
- 4 cups basmati rice
- 6 ¼ cups chicken stock or water
- Toasted nuts almonds pine nuts pistachios (to your choice)
- Boiled eggs
- Fresh coriander/ fried raisins/ fresh lime
Preparation
- Marinate the rinsed and drained chicken with coriander powder, chilli powder and black pepper powder
- Chop the onion, garlic and tomatoes
- Heat the oil/ butter in a pan and saute the onion and garlic till softened
- Add ginger
- Saute, adding some salt to draw out moisture
- In another pan heat some butter and fry the marinated chicken just till golden colour on both sides
- When the onions are nicely sauted and golden add the chopped tomatoes and tomato paste till moisture evaporates
- Add the baharat spices, ***
- Add the dried lime. Stir well
- Transfer the onion mixture to a larger pot.
- Add the chicken to this pot and cook just stirring gently till coated all over
- When the oil separates add stock or water
- Bring to boil. Cover and cook the chicken for 20 min.
- Remove the chicken pieces and keep stock separate
- Broil the chicken pieces in preheated oven for 10 minutes to form the crust over chicken
- Fry the drained rice in the same butter
- And to the pot of chicken stock and cover and cook till done
- Fluff up the rice with a fork adding a little butter
- Squeeze lemon on the chicken pieces
- Top up with the broiled chicken, boiled eggs, chopped coriander leaves and nuts and raisins
How to prepare baharat spice mix
- 4 tablespoons black pepper
- 2 tablespoons coriander
- 2 tablespoons cinnamon
- 2 tablespoons cloves
- 3 tablespoons cumin
- 1 teaspoon cardamom
- 4 teaspoons nutmeg
- 4 tablespoons paprika
Grind all the above spices to fine powder and keep in airtight container
